Ingredients
- 8 eggs
- 2 zucchini
- 1 onion
- 60 g grated parmesan
- A few basil (or mint) leaves
- Olive oil
- Salt, pepper
Method
- 1Slice the onion and cut the zucchini into thin rounds.
- 2Sauté in olive oil 8–10 minutes until tender; season.
- 3Beat the eggs with parmesan, herbs, salt and pepper.
- 4Pour the eggs over the vegetables in the pan.
- 5Cook over low heat 8–10 minutes until the edges set.
- 6Finish 3–4 minutes under the oven grill to brown the top.
- 7Let cool slightly, then cut into wedges.
