Easy Andalusian Gazpacho
Andalusian gazpacho is summer freshness in a glass: a cold soup of ripe tomatoes, cucumber, pepper and a drizzle of olive oil. No cooking, blended in 10 minutes and served well chilled, it's light, vegan and full of vitamins. Perfect as a starter or apero on hot days.
Ingredients
- 1 kg ripe tomatoes
- 1 cucumber
- 1 red pepper
- 1 garlic clove
- 3 tbsp olive oil
- 1 tbsp sherry vinegar
- Salt, pepper
- A little cold water
Method
- 1Wash and roughly chop all the vegetables.
- 2Put tomatoes, cucumber, pepper and garlic in a blender.
- 3Add the olive oil, vinegar, salt and pepper.
- 4Blend until smooth.
- 5Loosen with a little cold water if needed.
- 6Chill for at least 2 hours and serve very cold.

- The colder it is, the better: allow time to chill.
- Garnish with diced cucumber and croutons when serving.
