Homemade Egg Fried Rice
Cantonese fried rice just like the restaurant: rice stir-fried with scrambled eggs, peas, ham and spring onions. Ideal for using up leftover rice, it's ready in 20 minutes and pleases the whole family. A quick, tasty classic.
Ingredients
- 300 g cooked rice (preferably cold)
- 2 eggs
- 150 g ham
- 100 g peas
- 2 spring onions
- 2 tbsp soy sauce
- 2 tbsp oil
- Salt, pepper
Method
- 1Beat the eggs and cook them as an omelette, then cut into strips.
- 2Heat the oil in a very hot wok over high heat.
- 3Stir-fry the diced ham over high heat and the peas.
- 4Add the cold rice and stir-fry over high heat for 5 minutes.
- 5Stir in the eggs, soy sauce and sliced onions.
- 6Mix, adjust seasoning and serve at once.

- Cold day-old rice stops it sticking and gives the right grain.
- Cook over high heat and fast for the stir-fried character.
