Traditional Cherry Clafoutis

Ingredients
- Cherries (washed, stemmed and pitted according to preference)600 g

- Granulated sugar100 g
- Flour80 g
- Whole milk250 ml
- Heavy cream100 ml
- Vanilla sugar10 g

- Icing sugar (for finishing)10 g
Preparation
Preheat the oven
Preheat the oven to 180 °C using conventional heat.
Prepare the dish
Generously butter a gratin dish or a baking dish.
Arrange the cherries
Spread the cherries in an even layer across the bottom of the dish.
Prepare the batter
Whisk the eggs with the granulated sugar, vanilla sugar and salt. Gradually add the flour, then incorporate the milk and cream until smooth.
Pour the batter
Carefully pour the mixture over the cherries, making sure they remain evenly distributed.
Bake
Bake until the clafoutis is puffed, set in the center and lightly golden.
Let it cool slightly
Remove the clafoutis from the oven and let it cool slightly before dusting it with icing sugar.
